And it seems that even the recovery of legitimate, non-pirated content, will take a very long time, IF it ever happens at all.

Your DVD player, when it has a 25 FPS video that is interlaced, does the de-interlacing automatically by using a method which doubles the framerate (so ir effectively plays at 50 FPS). When you used that program for conversion, you de-interlaced the video by a method that didn't double the framerate...
