Teams vary. Sam Bird told me he's using the spare Mercedes but I contacted HRT's press people who said Dani Clos was using Daniel Ricciardo's car.
I guess the top teams will be using a spare chassis and spare parts

According to scarbs the AMG involvement is both marketing and technical, but why they won't test the car sooner?

F1′s pre-season test period kicks off two weeks earlier, at Jerez, where Mercedes will presumably be running with its 2011 single seater.
“We believe that the decision to run the car at the second winter test is the optimum compromise for our design and development programme,” said team boss Ross Brawn.
The news came as Mercedes announced that it is adding the acronym ‘AMG’ – its high-performance arm – to its official name in 2012.
“We are very proud to reveal our new team name (Mercedes AMG Petronas) today,” said Brawn.

The 1988 McLaren did one days testing before the first race and that worked out ok.

the 2011 car should have some 2012 components to verify computer simulations but its nothing that should worry AMG fans
